5 years ago, I decided to go grain-free and sugar-free, replacing refined carbs with vegetables and learning new ways to prepare them. Thus began my health food journey.
I tried eggplant for the first time (and loved it).
I began roasting cauliflower almost every day.
I made basil pesto for the first time and couldn't believe what I'd been missing out on.
But cooking is only half the challenge. I know the frustration of shopping for vegetables at the grocery store and coming home with pale, bland tomatoes and slimy lettuce.
