This simple and hearty bowl of green goodness is quick to make if you've already got a batch of basil pesto in the frig.
Chicken and White Beans with Basil Pesto
1 T. oil
1/2 cup onions, chopped
1 garlic clove, minced
1/2 cup chicken stock (add more as needed)
1 can of white beans aka navy beans, drained (or 1 3/4 cups cooked beans)
1-2 cups cooked chicken, cut in small pieces
1/2 tsp salt
1/8 tsp black pepper
1/4-1/2 cup basil pesto
Parmesan for topping
Heat oil in a pot.
Saute onions until golden and tender.
Add the garlic clove and saute briefly until fragrant.
Add chicken stock, white beans, chicken, salt and pepper and heat thoroughly.
Stir in basil pesto.
Serve topped with parmesan cheese.
