I've got lots of spinach this week, so I thought I would share how we like to preserve it:
Wash the spinach and dry thoroughly.
Then place in a ziploc bag and freeze.
After it is frozen, you can crush the spinach and press the extra air out of the bag, which will shatter it into tiny pieces so that it takes up much less space in your freezer.
Now you will have a supply of locally grown greens to enjoy year-round. We like to use our frozen spinach in smoothies, quiches, lasagna, and casseroles.
